This pea and roast asparagus salad with a green goddess dressing is a fresh and flavorful dish that’s so simple to prepare. A vibrant blend of fresh, seasonal flavors making this salad a perfect light meal or side that your family and friends will love.
Recipe is enough as a side for 2-3 people
Ingredients
For the dressing
1 T Greek yoghurt or coconut yoghurt
1 T Waiheke Herb Spread
1 t maple syrup
Juice of ½ a lemon
For the salad
1 bunch of asparagus, with woody ends removed
2 c green peas, if using frozen, sit them in warm water to defrost, and drain
½ red onion, finely sliced
¼ c pistachio nuts
¼ to ½ cup feta cheese
Fresh parsley to garnish as well as Waiheke Blend EVOO
Directions
Prepare the dressing by whisking all the ingredients together and setting aside in the fridge.
Slice the asparagus lengthways and place in the oven to roast along with a drizzle of Waiheke Blend EVOO and a pinch of salt. Roast at 180 degrees Celsius for around 12 minutes, keeping an eye on them to ensure the tips don’t burn.
To serve, plate up the peas, place the asparagus on top, drizzle over the dressing, followed by the feta, red onion, pistachio. Garnish with parsley and a generous drizzle of EVOO.
