Recipe | Watermelon pomegranate & cucumber salad

Our friends from Little Bird recently visited Rangihoua Villa and cooked up some delicious recipes to share between friends, this is the first recipe they created using our Allpress Waiheke Blend EVOO.

A beautiful dish full of juicy summer vegetables and fruits. With cucumber and watermelons boasting about 90% water content, this salad is incredibly hydrating.   

We’ve topped this gorgeous salad with Allpress Waiheke Blend extra virgin olive oil (EVOO) to enhance the flavour and help you absorb the fat-soluble vitamins and antioxidants like Lycopene.

If you haven’t experienced it yet, you’ll be surprised at how delicious the combination of high quality EVOO and a sprinkle of flaky sea salt on watermelon can taste.  

The cashew-based feta is optional here, being entirely up to your preference or what you have on hand – this salad stands wonderfully on its own!  

 

Ingredients  

3 c watermelon, diced into 2cm cubes 

2 c cucumber, diced into 2cm cubes  

¾ c fresh pomegranate seeds (approximately 1 pomegranate) 

1-2 t fresh lemon juice 

1 t red wine vinegar 

1½ c finely chopped flat-leaf parsley 

½ c finely chopped mint 

4 t Allpress Waiheke Blend EVOO

Freshly cracked pepper and a pinch of sea salt (add to taste) 

Optional – Savour Casheta (a cashew-based feta) or your favourite Feta cheese.   

 

Directions  

Place the watermelon, cucumber and pomegranate in a large bowl; lightly toss with a few pinches of sea salt, lemon juice, vinegar and Allpress Waiheke Blend EVOO.  

Fold through the herbs and serve on a plate or in a large bowl.

Season with freshly cracked pepper and more sea salt to taste. 
 

Optional – serve with Savour Casheta or your favourite feta cheese sprinkled on top.
