Recipe | Herby Garlic Flatbread with Waiheke Herb Spread

A soft, flavour-packed flatbread perfect as a snack or side dish

Packed full of aromatic herbs, garlic and our Waiheke Blend Extra Virgin Olive Oil, this flatbread is perfect as a side or a snack. Enjoy it warm, topped with an extra brush of herb spread and a sprinkle of flaked salt.

Makes 3 flatbreads

Ingredients

Dry mix
1 ¼ c flour
1 t salt
½ t baking powder

Wet mix
½ c greek yoghurt
2 t Waiheke Herb Spread
2 garlic cloves, chopped

Directions

In a large bowl, combine the dry ingredients. In a separate bowl, stir together the yoghurt, Waiheke Herb Spread and garlic cloves.

Add the wet mix to the dry and start to knead it into a dough. Chop into 3 balls, cover with a tea towel, and set aside at room temperature for 20 minutes.

On a lightly floured surface, roll out each dough ball into rounds. Heat a drizzle of Waiheke blend EVOO in a pan, and fry off the bread, until golden on each side.

Serve warm with an extra brush of the herb spread and a sprinkle of flaked salt.
